Amazing Peach Sorbet

This recipe is so simple and delicious that anyone should be able to whip it up in just a few minutes. I guarantee that it will take you ten times longer to eat this than what it takes to put it together for the flavor is to delicate that you’ll want to savor every spoonful.

Be prepared, for this will make a meal!

Recipe:

  • 1 cup coconut milk
  • 4-5 large medjool dates (pitted)
  • ½ to ¾ tsp vanilla powder
  • ¾ bag of frozen peaches

First thing to notice here is that I prepared last summer! When boxes of peaches came on for ‘cheap’ I bought a bunch and saved them in the freezer. Each quart size bag as the equivalent of eight medium peaches so this recipe calls for about six. Note that the skins and pits have been removed so what comes out of the bag is pure peach ‘meat’.

Add the coconut milk into your 3-horse power blender (I strongly advise that you only use something that really has the muscle to get through this), drop in the dates, about a teaspoon vanilla powder and then about 6 frozen peaches. I use a knife break apart the frozen block of peaches. I make sure each piece I break off is no bigger than about ½ a peach (size wise – large ice cube size).

With all this in the blender you’ll want to start out on about 4 or 5 and use the tamper to press the frozen peach down into the blades. This is pretty hard to do. You’ll almost feel like standing on it in order to force the peaches down. As soon as the mixture starts to grip in, start counting in your head and turn the blender above 7. Quickly work the peaches down with the tamper and make sure to not let it develop an air bubble down at the blades. This hectic grinding process shouldn’t take more than 30 seconds. If so, you’ll end up with a milk shake rather than ice cream.

The little specs that you see in this mixture is the dates. Yum!

This six peach mixture makes two beautifully decadent servings. You’ll want to savor every bite. The little bits of dates come across as little cold sweet carmelly tidbits.

I highly recommend this desert (meal) and I believe you will too.

Parsley Pear Banana Smoothie

I love parsley! When I was a teenager, I would buy it by the bunch and eat it like eating a bouquet of flowers. People that observed this behavior called it ‘grazing’. Looking back, I now think of it as a little weird, but that doesn’t change the fact that I love parsley!

I’ve been looking for nearly two years now for a combination of ingredients that would significantly mask the taste of parsley so that my wife, who really doesn’t care for anything be the taste, would not complain about a parsley smoothie. Normally, all she has to be is in the same room as a parsley smoothie and her spirit gets all worked up. She absolutely detests parsley smoothies!

Well, as it turns out, for the last three days she’s had parsley smoothies without knowing it. And, better yet, each day I asked her what she thought of the days’ smoothie and she’s said “Ok” and “good”, but still complains that it’s too thick (parsley tends to congeal when it gets broken down, thus it’s jello like if you don’t thin it out.)

So, I’m going to have to say that this parsley smoothie passes the Lori test – which is a pretty high bar to get over!

Parsley, Pear, Banana + smoothie

Recipe:

  • 2 Bananas
  • 2 Pears
  • ½ Mires Lemon
  • 2 Medjool Dates
  • 1 cup Coconut milk with Vanilla flavorings
  • ½ cup Dole Pina Colada juice
  • 1 Tbs ground golden flax
  • 1 probiotic

And, of course:

  • 1 full bunch well washed parsley

If you haven’t noticed, one of the key principles of the green smoothies that I make is that there needs to be an incredible base of liquid to really bring out the flavors in the smoothie. In this case, it really is a must have to include the Dole Pina Colada mix! Without this, it just wouldn’t be the same. 

Funny thing about this juice was that a friend came over on the weekend and had a couple pina coladas but left leaving half a container of mix. Not wanting it to go to waste, I figured I’d add it to a smoothie or two. Well, I’m glad that I did for this smoothie would not be the same without it.

Back to the preparation process. Throw everything together and blend.  J 

Well, actually not everything. Add Juice first, throw in bananas, slice pears adding everything but stem and seeds. Pit the dates and add. Squeeze the lemon making an effort to not allow the seeds in (adds bitter taste). And start the blender for a few seconds to break up the bigger pieces. Now grind the flax seed in your old coffee grinder until fine (and standing) add to smoothie. Add probitic and then cram in the parsley.

Blend again and give it 60+ seconds on high. When you feel the side of the blender and you can sense just a little heat, stop!

It’s at this point that you taste it. Is it sweet enough? Peary enough? Creamy enough? The taste that should stand out is the Pina Colada mix and pear granules (those little specs of pear that don’t grind up).

I’ve got one more bunch of parsley, two pears and a couple bananas so I’m sure this will be on the menu for tomorrow. After that, back to mangos! Got a collection of those for under a buck yesterday and one’s almost ripe.

Harmonizing with Self

Today’s task was to – harmonize with self. Now that the day’s over, I’m going to have to stretch this task out for a few more days. Maybe weeks or months!

This morning’s meditation left me with a solid feeling that my current goal is to harmonize with myself. This act can be likened to the feeling you get when you sing something that moves your spirit. Or, it’s that feeling you get when you witness something so beautiful it brings you to tears. It might also be that feeling when all the thoughts drop out of your mind leaving you enjoying the moment for what it truly is; amazing, whole, truthful.

At the Matrix Energetics conference I attended last December, they called it getting into the heart space. It’s the act of surrendering. A moment when your analytical mind stops it’s runaway processing to allow the sensing mind the opportunity to see the world without a commentator. Dr. Bartlett would say that you picture yourself riding in an elevator down to your heart. As much as I ‘tried’, this analogy simply wouldn’t cut it for my imagination. I would play with the scenario a little too much. The end result would always be more thought. It was like adding fuel to the mental fire.

For a long time, I’ve known deep inside that the heart space sensation is like the feeling you get when you look in someone’s eyes – and experience physical sensations. It’s those feelings that can only occur when you’ve stopped analyzing in simply feel. It’s the experience of truth unbounded. It’s the giving into the moment and enjoying it for what it is without judgment. It’s the place that miracles happen.

The complication has always been – how do you reproduce that experience on your own at will?

Well, that’s what I realized for myself this morning.

The act of harmonizing with self is the act of sensing the vibrations that are currently around and consciously bringing them in sync. The vibrations don’t have to be a perfect octave or a third or fifth, but simply not repulsive! Life is musical and we all get to choose what music we want to be. Thus the act of harmonizing happens through the senses (sensation mind) via an open heart and conscious intent towards being in tune.

For me, this act has no room for the analytical rationalizations that keep the linear mind rolling. It is, simply, what it is. Most importantly, it works to center me in that heart space that resonates with the spirit of joy.

A Real Sense of Being

I’m really starting to love Youtube! What an amazing tool for linking people together. As you probably already know, pictures and video capture the essence of spirit so it can be viewed anywhere and everywhere. Well, today I’ve come across a video posted on thejoyofraw’s channel.

I would be willing to bet that it really was an astonishing moment when she realized that she was more than just a body! And I’d like to share that with you.

3:12 “It feels like my cells are ringing out with the harmony with the music of life!”

4:39 “[raw food] opens you up in a very magical way…”

I absolutely love how she admits that she didn’t know it was possible to feel this way. While she’s speaking these words, if you listen with your heart, you’ll feel the same experience! The emotions and understanding of her experience transfer very well in this video.

Part two goes into more details. This is where she talks about her spiritual awakening!

I love how she, once again, admits that spirituality is something that she’d never considered before. To me, that is pretty amazing, for as long as I can remember I’ve thought of myself as a spirit in a body. The body is here to serve the spirit.

She states, “It was this day that I realized, I recognized that I even had a spirit…” And then continues that the realization was that she was more than just this physical body. And the feelings transfer with her words!

Wow. I love her use of “I am” statements! Those resonate so powerfully. And the “You just know that it’s there” admission as the truth.
